Q: The top of my kitchen island doubles as a butcher-block cutting board. What is a sanitary way to clean the cutting surface?

A: Scrub the board with lemon and kosher salt. The salt acts as an abrasive, and the acid in the lemon will kill the bacteria. After the surface has been thoroughly cleaned, apply a coat of mineral oil to the cutting board to prevent the woodgrain from absorbing new stains.
